Carrot Mini-Cupcakes – Perfect Easter Treat!

I’ve been trying to decide on a simple Easter treat that the kids can make without too much supervision. These carrot mini-cupcakes are perfect! And aren’t they cute?

These would perfect to serve at parties as well.

Carrot Mini-Cupcakes

I’m not including a recipe for the chocolate cupcakes. Just use whatever recipe is your favorite and have them cooled before decorating.

Ingredients

• Prepared Chocolate Mini Cupcakes
• 1 Can of Vanilla Frosting
• Orange Food Coloring
• Edible Green Easter Grass

Directions

In a small bowl, combine the coloring and frosting and mix well.

Next, using a knife or a frosting tip, make a hole in the middle of the cupcakes.

Using a piping bag, fill the hole with frosting. Then pipe a dollop of frosting on top of the hole into a peak to look like a carrot top.

Stick 4 little pieces of the edible Easter grass into the carrot top.
