Easy Baked Oatmeal Recipe

This morning we enjoyed one of my favorite breakfast comfort foods – baked oatmeal. My family loves oatmeal in a variety of ways for breakfast, but there’s something about this easy baked oatmeal that is like a warm hug from my mom.

Maybe it’s because the recipe was passed down to me from her. Or maybe because it’s one of her favorite breakfast recipes. Or maybe it’s that I just plain wish I could see her more.

Whatever the reason, it’s yummy and comforting. A great combination for starting the day! The baked oatmeal pictured has apples and raisins in it. I typically pour a little bit of warm milk over it, but on this day I treated my kiddos to some homemade whipped cream.

This recipe is very simple to adapt for food allergies. Since we have one member of our family who has celiac, we use gluten free oats and baking powder. It would be easy to replace the milk products as well.

The other thing that I love about this recipe is that it only takes about 5 minutes to get it into the oven. It can also be made ahead or even frozen. Can it get much better for busy mamas? ๐Ÿ˜‰

Easy Baked Oatmeal Recipe

Cook time:  45 mins
Total time:  50 mins
Serves: 6-8 servings
 
Ingredients
  • 4 cups rolled oats
  • 1 cup brown sugar or sucanat
  • 2 cups milk
  • 4 eggs
  • 2 tsp. baking powder
  • ½ tsp. salt
  • 2 tsp. cinnamon
  • ½ cup butter
  • Optional: raisins and/or chopped apples
Instructions
  1. Preheat oven to 350 degrees.
  2. Grease 9x13 baking pan.
  3. Mix all ingredients together in bowl.
  4. Pour mixture into baking pan.
  5. Bake at 350 degrees for 45 minutes or until set.

My family of big eaters is now reaching the point where I will need to start making 2 pans of this at a time. For smaller families, you could half the recipe or just make the whole pan and enjoy cooking once and eating twice! ๐Ÿ™‚
